Many of you have had Swordfish on draft and even took home growlers. With the official bottle release coming up soon, we figured we would share a little about this special beer.
We first brewed this fun little (little? it’s 11% ABV!) barleywine on September 27, 2016. Exhibit ‘A’ Brewing had only brewed about 15 batches of beer total by this point. A simple beer, if you consider it’s made of just four ingredients: water, 100% Maris Otter Pale English Barley Malt, a healthy dose of Chinook for balance, and a happy and strong pitch of English Ale yeast. We boiled the wort for over 3 hours. This beautifully deep copper colored wort along with our yeast did their thing in one of our 40 barrel fermenters until the end of November 2016. We then transferred all of it into freshly dumped rye and corn whiskey barrels we got from our buds at Breuckelen Distilling. Then the beer rested….
We tasted and waited for months. On May 17, 2017 the time and beer were perfect. We transferred all the wood aged barleywine back into stainless where the beer would rest again for an additional year- 350 days to be exact. And as of last month, we moved this special brew into 500ml bottles which we are thrilled to offer to you.
Enjoy! And when we say enjoy, we mean enjoy it now. This beer is well aged and ready for your barleywine drinking pleasure. Sure, you can age it, so get a few bottles: one to drink, one to share, and one to age.
